This was an action packed week filled with friends, work, and a lot of great meals. We’ve been eating tomato, mozzarella, and basil salads with balsamic drizzle almost every night. One of our friends grows the best tomatoes and was nice enough to share a few.
Bike rides in Forest Park are a great stress reliever and so convenient. I used to drive half an hour to ride my bike on a trail in Indy, so this has been a nice change. My dad sent a photo of Jack patiently waiting for his convertible ride. This photo is the epitome of what summer is all about.
Avocado toast and eggs have been my go to lunch. Why is something so simple, so good? I do two slices of Udi’s toast, half an avocado and a little sea salt.
Two photos below from my bike riding adventures in Forest Park. The top is of the Muny outdoor theater where we saw Seussical the Musical this summer. I added a photo of a Robin Williams memorial set up somewhere in LA. I still can’t believe he is gone. Such a great man that touched so many lives. My boyfriend and I stayed up late and watched Hook as a small way to remember him.
I also ordered 120 k cups this week from an online retailer. It may seem like a lot of coffee, but much more cost effective. I got each k cup for about 55 cents, which is about half what it costs at the grocery. The limited edition pumpkin spice coffee made me pull the trigger. It is heaven in a cup. Yep, pumpkin in August. I went there.
I also hit the Etsy jackpot and found red ferragamos in my size. I have always wanted red ones, like my very own ruby slippers. Kopperman’s is our favorite brunch place and I found the ‘less is more mantra’ via a friend on Instagram. As I get older, the less is more appeals to me. It’s all about having a few treasured items and getting rid of the clutter. Finally, the green box is our bi-weekly Green Bean delivery, which I love. This week our box included greens, fingerling potatoes, grapes, peaches, banana chips, and tomatoes.
I thought I’d also share my favorite green smoothie recipe. Feel free to change up the combinations. Sometimes I add peanut butter and I’ve even seen people do avocado. Eyeball spinach, almond milk, coconut water, a banana, frozen strawberries (so you don’t have to add ice), and a little honey for sweetness. I love my Vitamix – probably the best gadget I’ve ever successfully stolen from my mother. No worries, she treated herself to a new one. 🙂
