Banana Bread in Mason Jars

Whenever bananas become spotted and brown, I have the urge to save them and make banana bread. Sometimes I freeze the bananas for smoothies, but nothing beats homemade banana bread when you have two or three brown bananas on hand. I wanted to try something new, so I googled for awhile until I stumbled upon several recipes for banana bread baked in mason jars. If you read my blog, you’ll notice a theme: I really like mason jars. I like drinking out of them, putting flowers in them, storing baking supplies, and  cooking my oatmeal in them….I could go on and on for all of the uses for mason jars. It’s welcoming, casual, and they come in all sizes. I love using mason jars for glasses when I have dinner parties – it’s not fussy and I think they look great on the table. I recently read that old peanut butter jar lids fit mason jars and are perfect for the freezer since the metal lids tend to rust. I’ll have to try this!

Now onto the recipe. I was pleasantly surprised with how the banana breads turned out and I will definitely be making these again. I played around with the measurements and settled on the ingredients below. I also decided to include a photo of my handwriting instead of typing it – I’m keeping it real. The original recipes I found called for shortening and I decided to swap it for butter. I rarely if ever use shortening and for this banana bread, it  doesn’t make a difference. You can also make this gluten free by substituting Cup for Cup flour or experiment with coconut flour.

The breads slide right out because of the cooking spray and the wide mouth jars are the best for this. The standard mason jars with the smaller lid size will work too, but you might end up having to eat it from the mason jar with a fork. They’re perfect to take on the go and will stay fresh in the fridge for a few days. Heat them up for about 30 seconds in the microwave and top with a little peanut butter.

This also makes a great gift – I sent one home with a friend this weekend. Wrap a bow around the rim of the lid and you have a special treat.
