Strawberry Fields Forever: Patachou Inspired Spinach Strawberry Salad

I forgot how good a simple salad can be in the summertime. Patachou has an amazing spinach salad with strawberries, sugared pecans, rotisserie chicken, red onion, and gorgonzola cheese. They serve it with a homemade balsamic that is thick and creamy. I make my own with greek yogurt and the combination of the sweet berries, the tang of the cheese, and the crunch of the pecans is perfect.






Balsamic Vinaigrette

  • ¼ c plain Greek yogurt
  • ¼ c balsamic vinegar
  • 2 T olive oil
  • 1 T Dijon mustard
  • 1 T honey

Mix all in a mason jar!


Sugared Pecans

  • 1 cup pecans
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  1. Melt butter over Medium-High heat. Add pecans and toss to coat.
  2. Add sugar, and stir until caramelized.
  3. Spread on wax paper and cool.

I’ve been packing salads in mason jars for lunch and use a tiny tupperware for the dressing. Get creative with layers of lentils, feta, chicken, beans, spinach….the possibilities are endless.



I saw Ben Harper last weekend and it was an amazing show. He is a great performer live and he played all of my favorites.


The CCC Strawberry Shortcake Festival was last week in downtown Indy and I got my strawberry fix for the summer. Always so much fun and it’s for a great cause.


I finally did the Pacers bike share and I have no idea what took me so long. It was like being a tourist in my own city and it was so easy to use. I am thinking about getting the yearly pass.
