Political debate season is my favorite. For political nerds, it is like a trainwreck and you can’t look away. Add Twitter as a component and you have a night of entertaining one liners and comments in real time. I’m in a less political job than my previous roles, so it was fun to really watch the cluster as a bystander. My foodie blog is not the place for me to bore you with a lofty recap of the night’s discourse, but I will say that there were two moments during the two hours of jabs that gave me hope for the future of the GOP. 1. Ohio Governor John Kasich’s response to the gay marriage question and saying that he had recently attended and supported the union of a gay friend. 2. Ben Carson’s comment about race and that it is more about a person’s brain than the color of their skin. Amen to that.
Now onto the recipe. I went to a work happy hour Jazz event at the zoo, had my one glass of wine, visited the koalas, and went home to get my debate on. I decided against more drinking – I don’t have the stamina or liver needed to keep up with a bingo style GOP drinking game. Instead, true to form, I threw on an apron, put on the debate, got my livestream Twitter feed on the iPad, and made these muffins. I had four bananas that needed to go, so I googled banana muffins + Nutella because who wouldn’t appreciate a little (or a lot of) Nutella swirl? I think Nutella is the one thing all of the candidates could agree on.
I couldn’t find my loaf pan and it is easier to share muffins anyways, so I went with my muffin tin. I brought them in on Friday for my colleagues and shared that I stress baked/self-medicated during the debate. I think they were a hit! I recommend eating them as soon as you make them – they are very moist and I am not sure they would keep very long, which shouldn’t be a problem after you taste them. They are also not the prettiest muffins, but that didn’t seem to stop anyone from devouring a few.
BANANA NUTELLA MUFFINS
Recipe via Brom Bakery
3-4 extremely ripe bananas, mashed
6 tablespoons butter, melted
6 ounces greek yogurt (I was out of greek yogurt, so I used crème fraiche, which made these over the top decadent)
2 teaspoons vanilla extract
2 cups flour
1 teaspoon baking soda
¾ cup sugar
1 teaspoon salt
⅔ cup Nutella (just eyeball this until you’re happy)
Preheat the oven to 350. Line a loaf pan with tin foil or put muffin liners in a muffin tin.
In a large bowl, combine the mashed bananas with the melted butter, stirring to combine. Mix in the eggs, Greek yogurt, and vanilla. Set aside. In a separate bowl, combine the flour, baking soda, salt, and sugar. Fold the dry ingredients into the wet.
This is the part where I just let my Nutella drizzle happen. The original recipe called for melting the Nutella and making swirls. Just take a spoon and swirl as much as you think is appropriate. The Trump/Megyn Kelly throwdown happened during the Nutella dumping, so my muffins were extra Nutella-y.
Bake for 60 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 15 minutes before removing from loaf pan.
The sad little muffin left at the end of the day on Friday (we started the day with two dozen).
One of my favorite concerts each summer is the Symphony on the Prairie’s Beatles Classical Mystery Tour. It’s the same every year, but I grew up dancing around the house to Beatles songs and it’s always a good time. Certain songs evoke certain memories. Maybe I’m Amazed is one of my favorites. Dear Prudence reminds me of college. Lady Madonna was my ringtone freshman year. I could have done without I am the Walrus.
I also remember seeing 1964, another Beatles cover band, at the Embassy in Fort Wayne and my dad let me stand on my seat to see, which I thought was really cool. REBEL! We met a girl that went to his high school (he was principal) and her name was Penny Lane. For real, her name was actually Penny Lane. Cool factor was off the charts.
