This past weekend Dig IN partnered with Sun King Brewing for a behind the scenes tour of the brewery with founder Clay Robinson and President Bob Whitt. I’ve known both since my intern days at the State Department of Agriculture eight years ago and they have both done so much for Indy. The event, Dig IN to Sun King, provided a two-hour tour to 30 people, complete with snacks from Smoking Goose, Trader’s Point Creamery, and a new microgreens place located downtown. I serve on the Dig IN board and I was lucky enough to be joined by my boyfriend and his mom for the event.
The swag bag contents were donated from Indiana Grown, which promotes all things local food. A few of my favorites include Just Pop In popcorn, Just Rennie’s cookies, Batch No. 2 mustard, and B Happy peanut butter.
My first love affair with Sun King was with their Weemac, but after tasting every variety this weekend, I am more of an Osiris fan. If you haven’t been on the tour, it’s a must and you’re guaranteed to laugh. Clay is not only an incredible brewmaster, but he’s hilarious too. You know you’re in for a good time when he gives an f-bomb disclaimer before the tour even starts.

Now that the weather is finally cooperating, I have been able to ride my bike the past two weekends! I always notice something new about Indy on each ride. The collection of photos below is a sampling of the sights I’ve seen while exploring on two wheels. I’ll hit up the Monon soon for less chaotic riding, but I am still in recovery mode from the accident and I am not ready to clip back in. PS – That’s a duck ramp on the canal.
Onto the recipe. This is by no means mind blowing, but it’s my go-to warm weather meal. I could eat it every day and it’s so simple. You can swap the chicken for tuna or eat it straight up.
Spring greens, cucumber slices, tomatoes, red onion, a whole lot of feta cheese, olives, basil, capers, chicken, and balsamic / evoo. MIX IT UP!
Hope everyone has a fabulous week!
XO, Libby
Libby, this looks so fun! Can anyone take the tour? I don’t know if Bob Whitt would remember me, but I worked with his wife, Ellen, in Senator Lugar’s Indy office. She’s such a great person and we all loved working together for an outstanding Senator. 🙂

Yes! Anyone can tour Sun King and I believe it is only $5. I worked with Ellen when I was in Governor Daniels office and she’s great!
